Fresh Corn Pancakes

Chocolate Ice Cream

Just put 4 cups of chocolate soy milk
and 4 Tablespoons of cane sugar
into an ice cream maker —
turn on the machine
and in a few minutes you will
have chocolate ice cream.

 

J&J’s Nachos

J’s Salsa
14.5-ounce can tomatoes
1/2 small onion
1 clove garlic
4-ounce can green chilies
2 teaspoons lemon juice
1/2 teaspoon basil
Mix in a small food processor,
until desired consistency.  

&J’s Tofu Cheese
12 ounces silken tofu
1/3 cup roasted red pepper
1/4 cup water
2 tablespoons nutritional yeast
2 tablespoons lemon juice
2 tablespoons tahini
1 1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
Blend till smooth. Serve with nacho chips.

 

Todd’s Waldorf Salad

We tried this and it was delicious!

 

Broccoli salad

6 cups broccoli, chopped
1/4 cup red onion, finley chopped
1/4 cup raisins
1/2 cup walnuts, chopped
2/4 cup grapeseed oil vegenaise
2 tablespoons lemon juice
Mix well. Chill before serving.

 

Cappuccino

2 cups vanilla flavor soymilk
2 teaspoons Roma
1/2 teaspoon vanilla
2 tablespoons maple syrup
Blend all ingredients in the blender.
Can serve hot or cold.
*Roma is a caffeine free grain beverage.

 

Refreshing!

and J made mint tea yesterday, here is his recipe.
2 cups fresh mint, chopped
2 quarts of water
Simmer in a covered pot for 10 minutes.
Chill for several hours.
Strain.
Serve over ice.
Add a little stevia if you like.
Delicious.

 

Limeade

On a hot day, after a game of basketball,
J likes to make a cool drink —
He squeezes 4 key limes into a glass,
adds 1/4 teaspoon stevia,
and fills the glass with seltzer and lots of ice.

 

Veggie Taco

Fill a tortilla shell with some —
Spanish Lady Guacamole
Alfalfa sprouts
Sliced mushrooms
Shredded vegan cheese
Diced tomatoes

 

Spanish Lady Guacamole

2 large ripe avacados, diced
2 tablespoons lime juice
2 teaspoons olive oil
1/4 cup onion, minced
1 cllove garlic, minced
4 ounce can of diced green chilies
1 small tomato, diced
Mix thoroughly and chill covered.
Serve with corn chips.
