Raw Taco
1 1/2 cups raw walnuts, soaked
1 teaspoon taco seasoning, or more to taste
2 teaspoons nama shoyu (raw soy sauce)
3/4 teaspoon ground coriander
1 1/2 teaspoon ground cumin
1/8 teaspoon cayenne (optional)
Soak raw walnuts in distilled or ionized water for 1 to 2 hours (important). Be sure to allow the nuts to dry out prior to making this or towel them dry if you are in a hurry. If they are too wet, then the mix gets gooey and gross.
Mix all of the ingredients in a food processor. The final mix should look like ground beef, so do not let the food processor go too long or the mix will be too fine.
Serve in romaine lettuce leaves and top with sliced tomatoes and sliced avocado.

Variations: Feel free to play with the ingredients once you have made this a couple of times and you understand the mix. Try making it more or less spicy. Just remember to not change the moisture content of the mix while you experiment with other ingredients.

To make it easier: Soak plenty of walnuts well in advance, allow them to dry for a few hours in a colander on the countertop, and then put them in a freezer bag and freeze them. Now you can just pull out the necessary amount for your recipe and have your raw tacos ready to eat in under five minutes!

Taco Seasoning
4 tablespoons chili powder
2 tablespoons cumin
4 teaspoons coriander
2 teaspoons paprika
2 teaspoons sea salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon oregano or Mexican oregano
1/4 teaspoon cayenne
Mix in a small bowl. Store in an airtight container. Makes 1/2 cup.

Raw Cheddar Cheese Sauce
1 cup raw cashews
1 teaspoon onion powder
1 cup hot water
1 teaspoon sea salt
1/2 cup nutritional yeast flakes
1/2 teaspoon garlic powder
1/4 cup canned pimientos, drained
1/2 teaspoon paprika
1 tablespoon fresh lemon juice
1/8 teaspoon cayenne (to taste)
Blend all ingredients together in a blender until smooth. Use on the raw taco, krispy kale chips, or anywhere a tasty cheese sauce is desired.
